It is produced by washing wheat flour dough with water until all the starch is removed, leaving behind only the gluten. With a protein content of around 75%, gluten vital de ble is commonly used as a food additive to enhance the texture and elasticity of bread, pizza dough, and other baked goods. It can also be used as a meat substitute in vegetarian and vegan dishes. However, it should be avoided by individuals with celiac disease or gluten sensitivity, as it contains gluten.
