So, what is melass?

Molasses, a byproduct of sugar production, is a thick, dark, viscous syrup that adds a rich, complex flavor to a variety of dishes. Its deep, caramel-like taste and aroma are reminiscent of brown sugar, with a slightly bitter undertone. Molasses comes in several grades, from light to dark, with the darker varieties having a more intense flavor. It's a popular ingredient in baked goods like gingerbread and sticky toffee pudding, but also pairs well with savory dishes, like barbecue sauce or marinades for meats.
