So, what is nuoc-mam?

Nuoc-mam is a traditional Vietnamese fish sauce used as a flavor enhancer in various dishes. Made by fermenting anchovies and salt for several months, the sauce has a pungent aroma and a salty taste. It's often mixed with other ingredients such as lime juice, sugar, garlic, and chili to create a dipping sauce or marinade. Nuoc-mam is considered a staple ingredient in Vietnamese cuisine and is used in dishes like pho, bun cha, and banh xeo. It adds depth and complexity to the dish while also providing a salty umami flavor.
