So, what is pignon?

Pignons, also known as pine nuts, are small edible seeds harvested from certain species of pine trees. These seeds have a sweet, nutty flavor and are commonly used in Mediterranean and Middle Eastern cuisine to add texture and flavor to various dishes. Pignons are rich in nutrients like magnesium, iron, and zinc, making them a healthy addition to any diet. They can be eaten raw or toasted, and are a popular ingredient in pesto, salads, and baked goods. Due to their high oil content, pignons can quickly turn rancid, so it's best to store them in an airtight container in the fridge or freezer.
