Säuerungskulturen, also known as sourdough cultures, are a blend of natural yeasts and lactic acid bacteria that are used in the production of sourdough bread, as well as other fermented foods like yogurt, sauerkraut, and kimchi. These cultures play a vital role in the fermentation process, imparting a unique tangy flavor and aroma to the finished product, while also helping to break down complex carbohydrates, making them easier to digest. Säuerungskulturen are typically added to a mixture of flour and water to create a "starter," which is then allowed to ferment over several days, before being used to leaven bread dough or other fermented foods.
