Also known as potassium bitartrate, this white crystalline powder is a byproduct of the winemaking process, where it is found on the inside of wine barrels. Tartrates monopotassique is often used in baking to prevent sugar crystallization, and it is also used in the production of carbonated beverages to regulate acidity. This ingredient is generally considered safe for consumption and is approved by regulatory agencies such as the FDA and EFSA.
